(One Of My Late Mother’s Recipes)
I started to learn cooking at a very young age.  As young as I could still remember, I used to help my mother in the kitchen.  And here today is one of her special salad that she would never missed having when she had some grilled or roasted meat.  My Mum would mostly make this Salad for the Sunday Meal.

And for this Salad you would need the followings :A small bag of potatoes, 2 or 3 Red Onions, Green Spring Onions, 2 Fresh Limes, Crushed Black Pepper, Salt and Olive Oil

Steamed the potatoes until tender (please don’t let it become mash) – after your potatoes been steamed, drain the remaining water or if there are not water, it is ok.  Then Leave it aside to cool down. (I prefer to steam my potatoes with the skin and removed them after they have cooled down)
While the potatoes are steaming :
Sliced the red onions thinly and put them in a bowl of salted water for 10-15 minutes.  Then drain the water in a small colander and wash the salt out and let the waiter drained for a few minutes.
Also cut your spring onions to small pieces and put them in a dish together with the red onions after it’s been drained.
After your potatoes have cooled down, sliced them ready.
 Add some crushed peppers, salt, lime and olive oil to taste
and mixed them together.. 
(Make sure the it does get that little Lime soured taste, but make sure it is not too strong) (You would most probably need only one line or depending on the amount of salads you are making, you might need one n half lime.
In a flat dish, spread some
onions salads
 spread some potatoes on top of the onions.
Then spread some onion salads on top of the
 First layers of potatoes
Then Again add the second and last layers of sliced potatoes on top
of the onions salad and again spread the last
bits of onions salads on top of the potatoes.
 Ready to Serve with your roasted or grilled meat
 that you have prepared
